LEDs can be dimmed but you’ll need to use PWM.
(Pulsed width modulation)
Basically varying the duty cycle with a pot is all that’s needed if you use a small microcontroller.
I’m happy to knock up a circuit and software if anyone is interested in having a go ?

PWM? - Wont that cause interference?

Not if it's done correctly. Being aware of good cable routing, using shielded cable, or using frequencies above what's audible are 3 methods that can be used alone or in combination depending on the circuit and application.
